Curried Lentil Soup

An unassuming soup to warm you on a cold day.

Curried Lentil Soup

Adapted from Madhur Jaffrey's World Vegetarian


2 Tbsp olive oil
1 onion, chopped
1 clove garlic, minced
1 tsp grated ginger
2-3 tsp hot curry powder
1 potato, diced
1 carrot, sliced
1 cup red or yellow lentils
4 cups vegetable stock or water
1 1/2 tsp salt
black pepper


Heat the olive oil in a soup pot. Add the onion, garlic and ginger and fry for 2-3 minutes. Add the curry powder and fry for another 10 seconds. Add the potato, carrot and lentils and stir briefly. Add the stock or water, bring to a boil and simmer for about 20-30 minutes until the lentils are tender. Add salt and pepper to taste. Purée part of the soup with an immersion blender and serve.

Interesting...Jaffrey doesn't seem to use much "purchased" curry...you found one recipe which does! Thanks for sharing!

Great choice, Andreas. I love lentils and, in fact, when I was trying to decide on a dish for this week, this was the one that I almost chose. But in the end a fish curry won me over. This one is definitely on my list to make though before we're finished with Madhur :-)
